The Dampt Chevalier d'Eon is made from 100% Chardonnay, fermented and aged entirely in stainless steel tank to preserve and highlight the beautiful fruit quality the brothers coax out of the Tonnerre terroir. Mid-lemon color with green highlights strewn throughout. On the nose, aromas of ripe Golden delicious apple, white peach, lemon meringue and baked pie crust waft from the glass. The palate showcases an exquisite balance of fruit, minerality, and acidity. The finish is thirst-quenching, subtle and refined. A gorgeous, easy-drinking wine to enjoy with oysters, a fried fish sandwich or grilled scallops and asparagus.
